I used to make this as a kid before I even knew what Korean Corn Cheese was. It was my struggle meal for when we ran out of food. I think that just about tells you how easy this dish is. It’s a great compliment to meat as well as on its own! I imagine it would be delicious over ramen or even with chips!Jump to Recipe
What is Korean Corn Cheese?
Korean Corn Cheese is a sweet and savory side dish found at most Korean BBQ restaurants. It is often served with grilled meat. In the restaurants, they’ll cook it on the grill next to your meat. You’re meant to wrap the meat in the cheese corn and eat it in one bite. It’s really simple to make and only uses a few ingredients!
What do I need to make it?
Of course, the main ingredient is corn! You wanna make sure you get sweet corn because that will give the dish the most flavor. You can also use either canned or fresh corn (frozen works too). I’ve made it with both and they taste the same! If you’re using fresh corn, I recommend cooking the corn in some butter until they’ve become bright yellow and a bit soft. If using canned corn, you can just throw all the ingredients together.
Butter– the butter adds a buttery flavor to the corn cheese.
Mayo– I used Japanese mayo but any mayo works! The mayo adds a creaminess to the dish that allows the cheese to mix well with the corn. You can also replace the mayo with milk or heavy cream. I’ve substituted for both before and the result is almost the same.
Sugar- I like to add sugar to my cheese corn but you don’t have to! I find that it brings out the sweetness of the sweet corn.
Salt- just a pinch to balance all the flavors!
Green Onions- adds a bit of freshness to the corn cheese! I’ve made this dish without the green onions and it tastes good too but the green onions on top makes it look fancier.
Mozzarella Cheese- lots and lots of mozzarella cheese! I honestly don’t measure how much cheese I use whenever I make this so measure with your heart.
How do you make it?
If you’re using fresh corn, cook the corn in some butter for a few minutes until they’ve become yellow and slightly soft. If using canned corn, drain the corn completely. You do not need to cook the corn in butter if you’re using canned corn however I like to cook the canned corn in some butter until it has warmed all the way through.
After that, you’re gonna add in the cheese, mayo, sugar, salt and green onions. Cook until the cheese has completely melted and then enjoy!
How else can I enjoy corn cheese?
- In a tortilla
- Over ramen (I like adding it over Buldak noodles)
- Wrapped in grilled meat
- On chips like nachos
- Over fried potatoes
- Mixed with mashed potatoes
- Between two slices of bread
- Over rice with extra Japanese mayo and green onions
- with fried chicken
The possibilities are endless!
Korean Cheese Corn
- 1 tbsp butter
- 10 oz sweet corn
- 1 tbsp sugar
- 1 pinch of salt
- 2 tbsp green onions
- 2 tbsp mayo
- 1 cup mozzarella cheese
- Sauté the corn in butter until cooked.
- Add in sugar, salt, green onions and mayo. Mix well.
- Add in cheese and mix well.
- Top with more cheese and green onions.
- Bake or cover until the cheese melts.
